Simplest & Yummiest Mudcake Recipe

As the name states, this is the simplest and yummiest mix and melt and mix mudcake recipe. It is a great one to save and come back to when you’re short on time and need to quickly whip up a crowd-pleaser.

My little girl and I did another rainy day baking session and this time her choice was white chocolate and strawberry mud cake. I managed to substitute the strawberry for raspberry to save us a trip to the shops. So super easy and a great one for little hands to join in. Let me know if you try it out! 

Ingredients: 
200g white choc (broken) 
350g unsalted butter 
500g white sugar 
1 1/2 cups milk 
2 1/2 cups plain flour 
3 eggs 
2 tsp vanilla extract 
Icing: 200g white choc (broken) 
Raspberries to top 

Method:
Preheat oven to 150 C (fan forced) Place butter, chocolate and milk in a microwave dish and melt (do short bursts so as not to explode!)

Stir melted ingredients until combined and smooth

Whisk through remaining ingredients

We added in broken dried raspberries here Pour into cake tin (we used a round 25cm) 

Bake for 1 hour 45 mins - insert skewer to test when ready

When cooled, melt remaining chocolate, colour if you like, and drizzle all over top of cake.

Add toppers as you like and enjoy
