Egg & Bacon Mini Tarts

We love everything in mini! Try these Egg & Bacon mini tarts as part of your lunch prep for the week ahead

Ingredients: 
X6 eggs
1 Pastry Sheet (GF pastry if you wish)
½ cup grated tasty cheese
200g ham or bacon
¼ cup milk
Butter or milk for pastry brushing

Method:
Preheat oven to 160 C 
Grease a 12 space muffin pan using butter or vegetable oil of choice 
Cut 1 sheet of defrosted puff pastry into 6 equal squares (do this twice to yield 12 squares) – GF pastry can be substituted here

Place pastry squares into muffin cases, gently push down to shape to muffin mould 


Using melted butter or milk & a pastry brush, cover pastry in butter/milk Combine x6 eggs, dash of milk and handful of chopped ham or cooked bacon Pour egg mix into pastry moulds

Add tasty cheese on top (or cheese of choice) 
Bake in oven for 25 mins or until pastry is golden
